Good evening lovelies!
I mentioned in a recent blog post about how I just love Banana bread and cannot get enough so I thought today I would share a recipe that I have used for the past year and am loving, I adapted it from one I found online to fit me!
What you will need!
- 3 bananas (ripe or not)
- 1/3 cup melted butter
- 1 teaspoon baking soda
- 1 teaspoon of vanilla extract
- Pinch of salt
- 1 large egg or I sometime use 2 small ones!
- 3/4 cup of soft brown sugar (you can use regular but I prefer this!)
- 1 1/2 cups of flour
- Extras you can also add to make it super yummy – chocolate chips, peanut butter, mini marshmallows, walnuts or pecans!
Now lets bake!
Before getting all my ingredients out I start off by turning the oven on to 175 degrees Celsius. I then really begin by mashing up 3 bananas in a big mixing bowl, I know many recipes call for ripe bananas but I’ve used both ripe or none ripe and the bread always comes out the same! Plus who wants to wait a few days when you’re craving it then and there! After mashing up the bananas completely I slowly add in the melted butter and the pinch of salt and start to whisk!
I carefully mix in the baking soda before then beating up the eggs and pouring them in too with the vanilla extract! Next comes the sugar, I always tend to whisk harder here because you really don’t want any lumps of pure sugar running through your mixture. Finally the flour goes in, I always get it EVERYWHERE and as you can see from my picture below it’s always all over my bowl too! Just before you’re ready to dollop the mixture into your tin give everything a really good final whisk to make extra sure there are no lumps of flour or sugar milling about! This would then also be the time to add in any extras too! Today I have added some nuts into mine to give it that extra pizzazz but as I mentioned above using chocolate chips does wonders and so do marshmallows!
Now its time to pour the batter into your loaf tin or cupcake cases if you want a yummy lunch box snack, make sure that it has been greased and has baking paper inside of it! Smooth down the top of the batter once you’ve poured and then its oven time! I tend to cook mine in the middle of the oven and leave it in there for 50 minutes checking on it and sticking in a fork every now and then to make sure that it is cooking or cooked! At times I do find it can cook way quicker, especially in cupcake cases so always remember to keep checking on your bread. A fab indicator that it’s nearly done is when you can smell it super strongly in the air!
After your time is up and you have check and made sure that your bread is cooked all the way through its time to take it out of the oven and pop it onto a cooking rack out of the tin! Slice up your banana bread and enjoy hot, warm or cold because you deserve it! I particularly enjoy it with cream poured on top or custard!
Top Tip: If you use a bread knife the loaf cuts soooo much easier, so keep that in mind when serving up!
